Zucchini Carrot Bread
- 2 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 Tbsp. ground cinnamon
- 3/4 c. vegetable oil
- 3 eggs, beaten
- 1 1/2 c. firmly packed brown sugar
- 2 tsp. vanilla
- 1 c. zucchini, shredded
- 1 c. carrots, shredded
- 1 c. pecans or walnuts, chopped
- 1/2 c. crushed bran flakes cereal
- Mix together first 5 ingredients and set aside.
- In a separate bowl combine the eggs, sugar, and vanilla, beating well. Mix in the zucchini and carrots.
- Combine with the dry ingredients and mix thoroughly.
- Stir in the nuts and the bran flakes.
- Pour batter into 2 greased and floured 8 1/2-inch by 4 1/2-inch by 3-inch loaf pans.
- Bake at 350u0b0 for 1 hour.
