Zucchini Carrot Bread

  1. Mix together first 5 ingredients and set aside.
  2. In a separate bowl combine the eggs, sugar, and vanilla, beating well. Mix in the zucchini and carrots.
  3. Combine with the dry ingredients and mix thoroughly.
  4. Stir in the nuts and the bran flakes.
  5. Pour batter into 2 greased and floured 8 1/2-inch by 4 1/2-inch by 3-inch loaf pans.
  6. Bake at 350u0b0 for 1 hour.
