Crock-Pot Fajitos
- 1/2 lb. flank steak, stir fry steak
- 1 medium onion, sliced or chopped
- 1 red pepper, cut into small strips
- 1 chopped jalapeno pepper (optional)
- 1 Tbsp. cilantro
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1 green pepper, cut into small strips
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/4 tsp. salt
- 12 (8-inch) flour tortillas
- Cut steak into medium portions. In crock-pot, combine meat, onion, peppers (green, red and jalapeno), cilantro, chili powder, cumin, garlic, coriander and salt. Add tomatoes. Cook on low for 8 to 10 hours or high about 4 hours or until meat is tender. After cooking, shred meat and return to mixture and serve hot. To serve, spread mixture on tortillas. Add desired toppings. Roll up tortillas and serve.
