Strawberry Pork Chops
- 4 thick pork chops, cut with "pockets"
- 3 c. fresh, whole strawberries
- 1/2 c. dry bread crumbs
- 1 Tbsp. hot water
- 2 Tbsp. butter, melted
- 1 Tbsp. diced celery
- 1 Tbsp. minced onion
- 1 Tbsp. minced green pepper
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. sage
- 1 Tbsp. cooking oil
- 4 Tbsp. brown sugar
- 1/4 c. soy sauce
- In a bowl, combine 1 cup of whole berries, bread crumbs, water, melted butter, celery, onion, green pepper and seasonings. Stuff pork chop pockets with mixture and close with toothpicks. In a large skillet, heat the tablespoon of cooking oil and brown chops on both sides.
- Remove chops from skillet and place in baking dish.
- In a small saucepan,
- mash the remaining strawberries and combine with brown sugar and soy sauce; baste chops.
- Reserve the rest for basting chops.
- Cover baking dish with foil and bake in a preheated 375u0b0 oven for 90 minutes. Remove chops at 30-minute intervals to taste.
