Orange-Pumpkin Cake Squares
- 1/2 c. shortening
- 1 1/2 c. sugar
- 1 c. cooked, mashed pumpkin
- 2 eggs, beaten
- 1/3 c. frozen orange juice concentrate, thawed (undiluted)
- 1 2/3 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1/2 tsp. allspice
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- Cream the shortening.
- Gradually add the sugar, beating well. Add pumpkin, eggs and orange juice; mix well.
- Combine remaining ingredients, mixing well.
- Stir into pumpkin mixture.
- Pour into a greased and floured 13 x 9 x 2-inch baking pan.
- Bake at 350u0b0 for 30 to 35 minutes or until a wooden pick inserted in center comes out clean.
- Cut into squares and serve.
