Candied Sweet Potatoes

  1. Preheat oven to 350u0b0.
  2. Wash apricots and soak with raisins in apple juice for 1 hour.
  3. Steam sweet potatoes until tender.
  4. In a small saucepan, combine tapioca with apricots, raisins and juice. Let mixture stand for 5 minutes.
  5. Bring to boil over medium heat; stir often.
  6. Remove from heat.
  7. Add brandy (optional) and cool for 20 minutes.
  8. Cut cooked sweet potatoes into 1/2-inch slices.
  9. Mix with applesauce.
  10. Place this mixture in a 1 1/2-quart dish.
  11. Pour the apricot-raisin sauce over the top.
  12. Bake, uncovered, for 30 minutes.
  13. Makes 6 servings.
