Candied Sweet Potatoes
- 1/2 c. dried apricots
- 1/2 c. dark raisins
- 1 c. unsweetened apple juice
- 4 medium sweet potatoes, scrubbed and trimmed
- 1 Tbsp. tapioca
- 1 to 2 Tbsp. brandy (optional)
- 1 c. unsweetened applesauce
- Preheat oven to 350u0b0.
- Wash apricots and soak with raisins in apple juice for 1 hour.
- Steam sweet potatoes until tender.
- In a small saucepan, combine tapioca with apricots, raisins and juice. Let mixture stand for 5 minutes.
- Bring to boil over medium heat; stir often.
- Remove from heat.
- Add brandy (optional) and cool for 20 minutes.
- Cut cooked sweet potatoes into 1/2-inch slices.
- Mix with applesauce.
- Place this mixture in a 1 1/2-quart dish.
- Pour the apricot-raisin sauce over the top.
- Bake, uncovered, for 30 minutes.
- Makes 6 servings.
