Fiery Turkey Thighs
- 4 boned turkey thighs
- 1 onion
- 2 Tbsp. margarine
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 Tbsp. all-purpose flour
- 1 c. sour cream
- 1 (4 oz.) can sliced green chili peppers
- chives (for garnish)
- Rinse turkey thighs.
- Pat dry.
- Peel and chop onion.
- In a skillet, heat margarine.
- Add turkey thighs and saute until browned on all sides (about 15 minutes).
- Add onion and saute a few more minutes.
- Sprinkle with salt, paprika and flour.
- Stir to combine.
- Cover.
- Cook over medium-low heat about 25 minutes, turning thighs from time to time.
- Cut thighs into halves.
- Add sour cream and chili peppers.
- Blend well and cook for another 4 to 5 minutes.
- Sprinkle with chopped chives.
- Good served with rice or noodles.
- Serves 8.
