Quick Hearty Bean Soup
- 2 cans Bush's Great Northern (white) beans (undrained)
- 1 can Swanson's clear chicken broth (discard little blob of fat)
- 2 broth cans cold water
- 2 ribs celery, thin sliced crosswise
- 1 large carrot, grated
- 1 medium to large onion, diced
- 1 small turnip, diced (optional)
- 1 large potato, diced
- 2 large romaine lettuce leaves, stripped from center vein, stacked and cut crosswise into narrow strips
- 3 or 4 inch pieces turkey Polska sausage, outer tough case peeled and discarded and meat cut crosswise into thin rounds or several slices deli smoked ham stacked and cut into narrow ribbons
- pepper to taste
- Put all ingredients into a large soup pot, bring to a boil on high, then reduce heat to a gentle simmer until onion, potato, celery and turnip are done, roughly 35 to 40 minutes.
- We do not add salt since other ingredients do very nicely for seasoning. This makes six generous helpings and with the addition of a hot bread and a light dessert makes a meal.
