Chocolate Mousse

  1. Make one day in advance!
  2. Line bottom of spring-form pan with wax paper (trace pan bottom onto wax paper; cut and fit into pan bottom).
  3. Melt chocolate morsels and 6 tablespoons water in double boiler.
  4. Add sugar.
  5. Remove from heat.
  6. Add 6 egg yolks.
  7. Beat egg whites until stiff.
  8. Fold into chocolate mixture.
  9. (Do in large bowl.)
  10. Beat 1 pint heavy cream, adding vanilla.
  11. Fold into chocolate mixture.
  12. Line bottom and sides of pan with ladyfingers (there will be a couple of leftover ones) to form picket fence. Chill overnight.
  13. Two hours before serving, beat 1/2 pint heavy cream with 2 tablespoons sugar.
  14. Pour over mousse, then sprinkle with chocolate sprinkles immediately before serving.
