Almond Joy Cookies
- 1 c butter
- 1 1/2 c white sugar
- 1 1/2 c brown sugar
- 4 eggs
- 4 tsp vanilla extract
- 4 1/2 c all purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 5 c semisweet chocolate chips
- 2 c flaked coconut
- 2 c chopped almonds
- Preheat oven to 375u0b0. Grease cookie sheets. In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda, and salt, stir into the creamed mixture until well blended. Finally, stir in the chocolate chips, coconut and almonds.
- Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
