Good For You Scones
- 2 c. whole wheat flour
- 1 c. All-Bran or Bran Buds cereal
- 1 Tbsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 3 Tbsp. margarine
- 1 egg
- 1/2 c. skim milk
- In a large bowl, mix together the whole wheat flour, cereal, baking powder, sugar and salt.
- Cut in the margarine until the mixture resembles coarse meal.
- Beat together the egg and milk. Add to the flour mixture and stir until well combined.
- Knead on a lightly floured surface for 3 to 4 minutes or until smooth.
- Roll out the dough 1/2-inch thick and cut with a 2-inch biscuit or cookie cutter.
- Place the scones in a heated, lightly greased (vegetable cooking spray) or Teflon-coated frying pan.
- Cook over low heat for 10 minutes.
- Turn and cook 10 minutes more.
- Yield: 14 scones.
