Good For You Scones

  1. In a large bowl, mix together the whole wheat flour, cereal, baking powder, sugar and salt.
  2. Cut in the margarine until the mixture resembles coarse meal.
  3. Beat together the egg and milk. Add to the flour mixture and stir until well combined.
  4. Knead on a lightly floured surface for 3 to 4 minutes or until smooth.
  5. Roll out the dough 1/2-inch thick and cut with a 2-inch biscuit or cookie cutter.
  6. Place the scones in a heated, lightly greased (vegetable cooking spray) or Teflon-coated frying pan.
  7. Cook over low heat for 10 minutes.
  8. Turn and cook 10 minutes more.
  9. Yield: 14 scones.
