Sausage Casserole(Serves 6)
- 5 medium potatoes, cooked and sliced
- 1 small onion
- 1 stick margarine, divided
- 3/4 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 c. milk
- 1 pkg. Eckrich sausage, sliced thin
- 1 box frozen peas, rinsed and drained
- 1/2 c. dry bread crumbs
- In a large saucepan, cook onion in 1/2 stick margarine until tender.
- Blend in flour, salt and pepper.
- Gradually add milk, stirring until smooth.
- Cook, stirring constantly, until mixture is slightly thickened.
- Line a 13 x 9-inch casserole dish with sausage.
- Add 1/2 the potatoes, 1/2 the peas and 1/2 the sauce. Repeat layers.
- Combine 1/2 stick melted butter and bread crumbs. Sprinkle over top of casserole.
- Bake at 350u0b0 for 45 minutes or until crumbs are lightly browned.
