Super Chili
- 1/4 c. olive oil
- 2 large yellow onions, peeled and coarsely chopped
- 1 1/2 lb. ground beef
- 1 1/2 lb. ground pork
- 1 tsp. salt
- 1/3 c. mild, unseasoned chili powder
- 3 Tbsp. ground cumin
- 3 Tbsp. dried oregano
- 3 Tbsp. unsweetened cocoa powder
- 2 Tbsp. ground cinnamon
- 1 1/2 tsp. cayenne pepper or to taste
- 4 c. tomato juice
- 3 c. beef stock or canned beef broth
- 8 medium garlic cloves, peeled and minced
- 2 to 3 Tbsp. yellow cornmeal (as optional thickener)
- 2 cans (16 oz. each) dark red kidney beans, drained and rinsed
- In a large skillet over medium heat, warm the oil.
- Add the onions and cook, stirring occasionally, until very tender, about 20 minutes.
