Miss Daisey'S Casserole
- 3 lb. ground beef
- 1 c. diced celery
- 1/4 c. diced green pepper
- 3/4 c. chopped onions
- 28 oz. can tomatoes
- 16 oz. tomato juice
- 8 oz. can mushroom pieces, drained
- 8 oz. can water chestnuts, drained and sliced
- 1 c. American cheese
- 1/2 c. green olives
- 1/2 c. ripe olives
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (6 oz.) pkg. egg noodles (uncooked)
- 2 c. Cheddar cheese, shredded
- Brown beef and drain.
- Add celery, green pepper and onions and saute.
- Add tomato juice, tomatoes and everything except Cheddar cheese.
- Simmer for 20 minutes.
- Pour into 2 casserole dishes. Bake for 30 minutes.
- Add Cheddar cheese on top.
