Chicken Spectacular
- 1 can French-style green beans, drained
- 1/2 c. mayonnaise
- 1 c. water chestnuts, drained and chopped
- 1 (6 oz.) can mushrooms
- 2 Tbsp. chopped onion
- 1 (6 oz.) pkg. long grain and wild rice
- 1 can cream of celery soup
- 1 pkg. slivered almonds
- 1 stewed chicken or 3 large breasts, diced
- salt and pepper to taste
- Stew chicken, then use broth to cook 1 package rice.
- Toast almonds in butter and salt under broiler in oven.
- Mix remaining ingredients along with chicken and rice.
- Place in 13 x 9-inch casserole dish.
- Top with slivered almonds.
- (Almonds can be mixed in casserole if desired.) If not moist enough before baking, pour chicken broth over casserole.
- This can be frozen, thawed well, then baked uncovered for 30 minutes at 350u0b0.
- Serves 10.
