American Pie(8 Servings)
- 1 c. sugar
- 1/3 c. cornstarch
- 1/4 tsp. salt
- 2 3/4 c. milk
- 4 large egg yolks
- 1/4 c. fresh lemon juice
- 1 Tbsp. butter or margarine
- 1 tsp. vanilla extract
- 1/2 tsp. grated lemon peel
- pinch of nutmeg
- 1/2 c. sour cream
- 1 (9-inch) baked pastry crust
- Combine sugar, cornstarch and salt in large saucepan. Gradually whisk in milk until smooth.
- Bring to boil, stirring gently, over medium-high heat.
- Boil for 1 minute; remove from heat.
- Beat egg yolks lightly in small bowl.
- Gradually whisk in 1 cup hot mixture.
- Return to saucepan, whisking constantly.
- Return to boil and boil 1 minute more.
- Remove from heat; whisk in lemon juice, butter, vanilla, lemon peel and nutmeg until completely smooth.
- Cover surface; cool 15 minutes on wire rack.
- Whisk in sour cream; pour into baked 9-inch pastry crust.
- Cover filling; refrigerate at least 3 hours.
- Just before serving, spread top with whipped cream.
