Greek Pasta Salad
- 1/2 lb. extra lean ground beef
- 1/3 c. chopped fresh mint or 2 Tbsp. dried leaf mint
- 1 garlic clove, minced
- 1 3/4 c. (6 oz.) small shell macaroni, cooked
- 10 cherry tomatoes, quartered
- 2 oz. Feta cheese, crumbled
- 1/2 red ball pepper, chopped
- 1/2 red onion, cut into rings
- 1/4 c. reduced calorie Italian dressing
- 2 Tbsp. lemon juice
- salt and pepper
- lettuce leaves
- Brown ground beef in a medium skillet.
- Drain.
- Add mint and garlic; cook 2 minutes, stirring constantly.
- Spoon ground beef mixture into a large bowl.
- Stir in pasta, tomatoes, cheese, red bell pepper and onion.
- Add dressing and lemon juice; toss lightly.
- Season with salt and pepper.
- Serve on lettuce-covered salad plates.
- Serves 4.
