Fettucini Carbonara
- 1 lb. fettucini
- 1 lb. maple flavored bacon
- 1/2 lb. Prosciutto ham, cut in 1-inch sq. (optional)
- 3 cloves garlic, diced
- 2 Spanish onions, chopped
- 1/2 c. grated Parmesan
- 1/2 pt. half and half
- 2 eggs
- desired seasonings (oregano, basil, Italian seasoning, chives or pepper)
- 1/4 lb. butter (or more)
- olive oil
- Microwave bacon until crisp; keep to the side.
- In frying pan, saute onions in olive oil over medium heat.
- Add desired seasonings and garlic.
- Add Prosciutto and cook to desired level of crispness.
- I usually cook for 1/2 hour and then turn down to low heat.
- In a separate pan, fry eggs hard.
- Remove and chop; add to onion mixture.
- In a bowl, mix cream with Parmesan.
- Beat until mixture is of milk shake thickness.
