Raspberry Coffee Cake
- 2 1/2 c. flour
- 1/2 c. sugar
- 1/2 c. light brown sugar, packed
- 3/4 c. oleo or butter
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 (8 oz.) container vanilla yogurt
- 1 tsp. vanilla
- 1 large egg
- 1/4 c. raspberry jelly
- Mix the first 4 ingredients until mixture is like fine crumbs. Reserve 1 cup of mixture.
- To remaining flour mixture add baking powder, soda, salt, yogurt, vanilla and egg.
- Blend well.
- Spread batter in 10-inch cake pan, greased and floured.
- Carefully spoon jelly over top of cake.
- Sprinkle with walnuts.
- Sprinkle reserved topping (flour mixture) over nuts.
- Bake at 375u0b0 for 50 minutes or until toothpick in center of cake comes out clean.
