Chocolate Chip Cheesecake
- 1 c. graham cracker crumbs
- 3 Tbsp. sugar
- 3 Tbsp. margarine, melted
- 3 (8 oz.) cream cheese
- 3/4 c. sugar
- 3 eggs
- 1 c. mini semi-sweet chips
- 1 tsp. vanilla
- Combine crumbs, sugar and margarine; spread onto bottom of 9-inch spring-form pan.
- Combine cream cheese
- and sugar mix at medium speed on electric mixer until well blended.
- Add eggs, one at a time, mixing well after each addition.
- Blend in chocolate pieces and vanilla and pour over crust.
- Bake at 450u0b0
- for 10 minutes.
- Reduce oven temperature to 250u0b0
- and continue baking for 35 minutes.
- Loosen cake from rim of pan; cool before removing rim of pan.
- Chill.
- Top with 6 ounce package almond brickle chips before baking (optional).
- Omit chocolate pieces and top with almond brickle chips before baking (optional).
