Picadillo(Spicy Meat Hash)
- 1 garlic clove, minced
- 2 lb. ground meat (pork, chuck, round, etc. or a combination)
- 3 Tbsp. olive oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 large apple, peeled and chopped
- 4 Tbsp. beef stock
- 2 Tbsp. cider vinegar
- 4 tomatoes, chopped
- 1 Tbsp. chili powder
- 2 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1 1/2 tsp. ground cumin
- 1/2 tsp. ground cloves
- 3/4 c. raisins
- 3/4 c. whole pine nuts or blanched slivered almonds
- Saute garlic, onion and pepper in oil for 5 minutes, then add meat and stir until cooked through (approximately 5 minutes). Add the rest of the ingredients and cook for 3 minutes. Use mixture in tortilla shells, empanadas, omelets or just serve with rice. Makes 7 cups. Will fill approximately 12 shells.
