Microwave Tyrolean Fish Fillets
- 1 c. finely chopped onion
- 1 lb. fish fillets (whitefish, sole, cod, etc.)
- 2 Tbsp. butter or margarine
- 2 Tbsp. Italian flavored fine, dry bread crumbs
- 1 (10 3/4 oz.) can cream of celery soup
- 1/4 c. Chablis or other dry, white wine
- 1 c. shredded Cheddar cheese (you may substitute Swiss or another favorite cheese)
- paprika
- 1 Tbsp. lemon juice
- 2 tsp. chopped parsley
- In 2-quart oblong glass baking dish, combine onion and butter. Microwave on High 3 to 4 minutes or until tender.
- Stir in soup, wine, cheese, lemon juice and parsley.
- Arrange fish in soup mixture.
- Spoon over fish. Sprinkle with bread crumbs and paprika. Microwave, uncovered, on High 12 to 14 minutes or until fish flakes, turning dish once halfway through cooking.
- Let stand 2 minutes before serving.
- Makes 4 servings.
