Orange Gingerbread Muffins
- 2 1/4 c. flour
- 1/4 c. packed brown sugar
- 1 Tbsp. grated orange peel
- 1 1/2 tsp. baking soda
- 1/2 tsp. each: ground ginger and cinnamon
- 1/8 tsp. ground cloves
- 3/4 c. water
- 2 eggs, lightly beaten
- 1/4 c. dark molasses
- 1/4 c. each: margarine and whipped butter, melted and cooled
- Preheat oven to 375u0b0.
- In a large bowl, combine flour, sugar, orange peel, baking soda and spices; set aside.
- In a small bowl, combine remaining ingredients.
- Add to flour mixture; don't beat or overmix.
- Combine only until moistened.
- Spray 12 muffin cups with nonstick spray.
- Fill 3/4 full.
- Place muffin pan in center of oven and bake until toothpick comes out clean, 15 minutes.
- Invert muffins on wire rack and cool.
- Serves 12.
- Contains 182 calories, 7 gm fat and 187 mg sodium.
