Orange Gingerbread Muffins

  1. Preheat oven to 375u0b0.
  2. In a large bowl, combine flour, sugar, orange peel, baking soda and spices; set aside.
  3. In a small bowl, combine remaining ingredients.
  4. Add to flour mixture; don't beat or overmix.
  5. Combine only until moistened.
  6. Spray 12 muffin cups with nonstick spray.
  7. Fill 3/4 full.
  8. Place muffin pan in center of oven and bake until toothpick comes out clean, 15 minutes.
  9. Invert muffins on wire rack and cool.
  10. Serves 12.
  11. Contains 182 calories, 7 gm fat and 187 mg sodium.
