Oatmeal Cookies
- 1 1/4 c. margarine, softened
- 3/4 c. brown sugar, packed
- 1/2 c. white sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1/4 tsp. nutmeg
- 3 c. regular oats (uncooked)
- 1/2 c. raisins
- 1/2 to 1 c. nuts
- Beat butter at medium speed; gradually add sugars, mixing well.
- Add egg and vanilla, mixing well.
- Combine flour with soda, salt and spices.
- Gradually add to butter mixture.
- Stir in oats and raisins.
- Drop by tablespoonful onto ungreased cookie sheet. Bake at 375u0b0 for 10 minutes or until lightly browned.
- Cool slightly in pan and remove to wire rack to continue cooling.
- (Add nuts with raisins.)
