Jay'S Chili
- 2 medium onions, chopped
- 1 green pepper, chopped
- 1 stalk celery, chopped
- 2 cloves garlic, minced
- 2 tsp. oil
- 2 cans stewed tomatoes
- 1 can tomato sauce
- 1 (6 oz.) can tomato paste
- 1/4 c. green chile salsa
- 1 whole jalapeno chili, chopped
- 3/4 c. chili powder
- 1 (4 oz.) can diced green chilies
- 1/2 c. water
- 1 tsp. salt
- 4 lb. lean ground beef
- In Dutch oven, saute first four ingredients in hot oil until tender.
- Add meat, 1 pound at a time.
- When meat is cooked, drain. Add remaining ingredients, stirring after each addition.
- Simmer 2 1/2 to 3 hours, stirring frequently.
- Adjust seasoning to taste. Goes great with cornbread.
