Creamy Broccoli-Chicken Casserole
- 2 tsp. margarine
- 1/2 c. diced onion
- 1 Tbsp. plus 1 1/2 tsp. all-purpose flour
- 1 c. skim milk
- 2 oz. Cheddar cheese, shredded
- dash of salt and pepper
- 6 oz. skinned, boned, cooked chicken, diced
- 1 c. cooked, chopped broccoli
- 1/2 c. cooked macaroni shells
- 1/2 c. chopped, drained canned pimentos
- Preheat oven to 375u0b0.
- In small saucepan, heat margarine until bubbly and hot; add onion and saute briefly (do not brown).
- Add flour and stir quickly to thoroughly combine; remove from heat and gradually stir in milk, stirring until thoroughly blended.
- Return to heat and cook, stirring occasionally, until sauce is thick and creamy, about 2 minutes.
- Remove from heat and stir in salt and pepper.
