Puff Pastry Chicken Bundles

  1. Set oven to 350u0b0F.
  2. Grease a 15x10-inch baking pan.
  3. Cut a lengthwise slit in each chicken breast to within 1/2-inch of the other side; open breast so it lies flat.
  4. Cover with plastic wrap; pound to flatten to 1/8-inch thickness.
  5. Remove plastic wrap.
  6. Sprinkle salt and pepper over chicken.
  7. In a saucepan, bring 1-inch of water to a boil; add spinach.
  8. Cover, and cook for 1-2 minutes, or until wilted; drain.
  9. Place five spinach leaves on each chicken breast.
  10. Spoon 2 tbsp cream cheese down the center of each chicken breast; sprinkle with walnuts.
  11. Roll up chicken, and tuck in the ends.
  12. Unroll puff pastry; cut into eight portions.
  13. Roll each into an 8x7-inch rectangle.
  14. Combine egg and cold water; brush over edges of puff pastry.
  15. Place the chicken at one short end; roll up tightly, tucking in ends.
  16. Place on prepared baking sheet.
  17. Bake at 350u0b0F for 25-30 minutes, or until golden brown.
