Gourmet Beef Burgers

  1. Heat oil in large, non-stick skillet until hot; add onion.
  2. Cook and stir until onion is browned, about 10 minutes.
  3. Add green pepper and mushrooms.
  4. Cook and stir until mushrooms are browned, about 8 minutes.
  5. Stir in wine.
  6. Simmer until reduced.
  7. Stir in beef broth, thyme, salt and pepper.
  8. Simmer, covered, until green pepper is limp.
  9. Divide beef into 4 equal parts.
  10. Shape beef into patties to match the shape of the French rolls.
  11. Broil beef patties 4 inches from source of heat 4 minutes.
  12. Flip patties.
  13. Broil 4 minutes longer for rare, or until desired doneness.
  14. Place patties on half of each roll.
  15. Top each patty with 3/4 cup mushroom mixture.
