Mother'S Fresh Apple Cake
- 1 1/2 c. salad oil
- 2 c. sugar
- 2 eggs
- 1 tsp. salt
- 1 tsp. soda
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- 2 1/2 c. all-purpose flour
- 1 c. chopped pecans
- 3 c. chopped raw apples
- Peel and chop apples and set aside.
- Measure oil into large mixing bowl.
- Add sugar and eggs.
- Beat until creamy with an electric mixer.
- Sift flour, then measure.
- Sift again with salt, soda and baking powder.
- Add a small amount of flour mixture at a time to creamed mixture.
- Beat well after each addition.
- Fold in pecans and chopped apples.
- Spread evenly in a 9 x 13-inch pan which has been lined with waxed paper.
- Bake at 350u0b0
- for 55 to 60 minutes.
- Turn out on rack to cool.
- Cut in squares.
- Serve with Cool Whip.
