Fresh Peach Cake
- 10 fresh peaches
- 1/2 c. blueberries
- 1 1/2 c. Bisquick
- 2 Tbsp. sugar
- 1/2 c. milk
- 2 Tbsp. cooking oil
- 1 egg
- 1 tsp. grated lemon peel
- 2 Tbsp. melted butter
- 1/2 c. sugar
- 1/4 c. brown sugar
- 1/2 tsp. cinnamon
- Halve peaches; peel, pit and cut into 1/4-inch slices; set aside.
- Combine Bisquick, milk, the 2 tablespoons sugar, the oil, egg and lemon peel; beat 30 seconds.
- Spread in greased 15 x 9 1/2 x 2 1/4-inch baking pan.
- Arrange slices in rows on top of batter. Sprinkle blueberries over the peaches, pour melted butter over fruit.
- Combine the 1/2 cup sugar, the brown sugar and cinnamon; sprinkle over fruit.
- Bake in hot oven (400u0b0) 25 to 30 minutes. Cut into squares.
- Serve with ice cream or freshly whipped cream.
