Crab Gumbo

  1. Brown in flour in oil until golden brown or darker.
  2. Add chopped vegetables, saute 5 to 10 minutes.tour vegetables in 6 quart pot, add water; let simmer for 30 minutes.
  3. Add tomatoes, let simmer for one hour. Then add okra, cook 15 minutes. Add crabmeat, let simmer for 15 more minutes.
  4. Serve over rice.
  5. I like to saute my okra in small amount of oil for 10 to 15 minutes the add to gumbo, not sticky.
  6. For seafood gumbo add 2 pounds of shrimp and one pint of oysters.
