Crab Gumbo
- 1 c. celery chopped
- 2 garlic cloves chopped
- 3 medium onions chopped
- 2 c. flour
- 1 c. bacon dripping or peanut oil
- 2 lb. brown crabmeat or 1 claw and 1 white
- 2 lb. okra chopped
- 2 2 1/2 c. tomatoes chopped
- salt and pepper to taste
- 3 quarts of hot water
- Brown in flour in oil until golden brown or darker.
- Add chopped vegetables, saute 5 to 10 minutes.tour vegetables in 6 quart pot, add water; let simmer for 30 minutes.
- Add tomatoes, let simmer for one hour. Then add okra, cook 15 minutes. Add crabmeat, let simmer for 15 more minutes.
- Serve over rice.
- I like to saute my okra in small amount of oil for 10 to 15 minutes the add to gumbo, not sticky.
- For seafood gumbo add 2 pounds of shrimp and one pint of oysters.
