Straw And Hay Casserole
- 1 lb. ground round or sweet Italian sausage
- 2 medium size onions, chopped
- 1/4 lb. fresh mushrooms, thinly sliced (optional)
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1 (12 oz.) pkg. fettucine noodles (half spinach noodles)
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 1/2 c. milk
- 1 1/2 c. water
- 2 chicken flavored bouillon cubes
- 1 c. shredded sharp Cheddar cheese
- 1/2 c. grated Parmesan cheese
- dash of nutmeg
- dash of pepper
- Cook fettucine noodles according to package directions; drain and rinse in cold water.
- Brown meat in large skillet.
- If sausage is used, remove casing and crumble sausage.
- Add onions and saute until tender.
- Add mushrooms and spinach and cook until mushrooms are slightly browned.
- Remove from skillet.
