Sweet 'N' Sour Shrimp
- 2 Tbsp. sesame seed
- 1 large red pepper, seeded and cut in strips
- 1 lb. large shrimp, shelled with tail section intact, deveined
- 1/2 c. sweet and sour or duck sauce
- 1 (16 oz.) can pineapple chunks, drained
- 1 (8 oz.) can water chestnuts, drained
- 1 bunch green onions, trimmed, cut in 2 inch lengths
- 4 c. cooked white rice
- Preheat oven to 350u0b0.
- Place sesame seed on baking sheet; bake 10 minutes or until golden brown.
- In large skillet, over medium high heat, heat 2 tablespoons salad oil.
- Add pepper strips and shrimp; saute 2 minutes or until shrimp turns pink.
- Stir in sweet and sour sauce, pineapple, water chestnuts, green onions, 1/2 teaspoon salt and the sesame seed; heat through.
- Serve over rice. If desired, garnish with green onions.
- Makes 4 to 6 servings.
