Meta'S Pound Cake
- 1 c. butter (softened at room temperature)
- 3 c. sugar
- 1 tsp. vanilla extract
- 3 c. flour, sifted with 1/4 tsp. baking soda
- 1 c. sour cream
- 6 eggs (at room temperature)
- 1/2 tsp. lemon extract
- Thoroughly cream butter and sugar.
- Add extracts.
- Add eggs, one at a time.
- Beat well.
- On low speed, stir in the sifted flour and soda mixture.
- Add sour cream and stir to combine.
- Using a tube pan or three loaf pans, cut wax paper to fit the bottom of pan or pans.
- Spray pans well with cooking oil and line with paper.
- Place the cake in the middle of the oven with a pan of hot water on the bottom rack of oven, which should be heated to 300u0b0. Bake until cake tests done, about 1 1/2 hours or a little longer, about 1 hour and 15 minutes for loaf pans.
