Danish Puffs
- 1 c. oleo (2 sticks)
- 2 c. flour
- 2 Tbsp. cold water
- 1 c. boiling water
- 1 tsp. almond extract
- 3 eggs
- 2 c. confectioners sugar
- 4 Tbsp. cream (milk may be substituted)
- 1 tsp. vanilla
- 1/2 tsp. salt
- Cut 1/2 cup oleo into 1 cup of flour until it resembles coarse meal.
- Add cold water and stir until well blended.
- Divide dough in half.
- Press each half into a 12 x 3-inch oblong on an ungreased baking sheet.
- Place boiling water and remaining 1/2 cup of oleo into saucepan.
- Bring to a boil.
- Add almond extract and remove from heat.
- Stir in remaining 1 cup of flour.
- Add eggs one at a time, beating well after each addition.
- Spread this mixture over the oblongs.
- Bake in hot oven at 425u0b0 for about 50 minutes.
