Peppered Bacon-Wrapped Pork Tenderloin
- 1/4 cup butter
- 3/4 lb mushroom, sliced
- 1 onion, chopped
- 1/4 cup pecans, toasted and chopped
- 2 (12 ounce) pork tenderloin
- 1 teaspoon salt
- 1 teaspoon pepper, ground
- 8 bacon, slices thick
- 1/4 cup brown sugar
- 1 teaspoon pepper, cracked
- Melt butter and saute mushrooms and onion until tender.
- Stir in pecans and set aside.
- Flatten pork to 1/4 thickness and sprinkle with salt and pepper.
- Spread mushroom mixture on one side of thr pork and roll up like a jelly roll.
- Repeat for second tenderloin.
- Wrap 4 bacon slices around each rolled tenderloin and secure with wooden picks.
- Place seam side down on a greased rack in a roasting pan.
- Rub with the brown sugar and cracked pepper.
- Bake uncovered at 450 for 15 minutes.
- Reduce temp to 400 and back for 15 more minutes.
