Peppered Bacon-Wrapped Pork Tenderloin

  1. Melt butter and saute mushrooms and onion until tender.
  2. Stir in pecans and set aside.
  3. Flatten pork to 1/4 thickness and sprinkle with salt and pepper.
  4. Spread mushroom mixture on one side of thr pork and roll up like a jelly roll.
  5. Repeat for second tenderloin.
  6. Wrap 4 bacon slices around each rolled tenderloin and secure with wooden picks.
  7. Place seam side down on a greased rack in a roasting pan.
  8. Rub with the brown sugar and cracked pepper.
  9. Bake uncovered at 450 for 15 minutes.
  10. Reduce temp to 400 and back for 15 more minutes.
