Potato Skillet Dinner
- 1 lb. ground beef or ground turkey
- 2 Tbsp. dried minced onion or 1 small, fresh chopped onion
- 2/3 c. water
- 2 tsp. dried parsley
- 4 medium potatoes, sliced
- 1 tsp. salt
- 1/4 tsp. garlic powder or 1 clove fresh garlic
- 1/4 tsp. ground pepper
- 1/2 c. fresh or frozen peas
- Brown the meat with the onion; drain fat.
- Add the water, parsley, potatoes and spices; bring to a boil.
- Turn down to a simmer and cover, stirring frequently, to keep the potatoes from sticking.
- (Add more water, if necessary.) Cook for 10 to 15 minutes, or until potatoes just begin to get tender.
- Stir in peas; cook another 6 to 8 minutes, still covered, stirring occasionally to keep from sticking.
- (Leftovers make great burritos.)
- Makes 3 to 4 servings.
