Perfect Pear Cake

  1. Preheat oven to 375u0b0F.
  2. Oil and flour 9-inch-diameter cake pan.
  3. Line bottom of the pan with parchment paper.
  4. Whisk eggs, oil, milk, and lemon peel in large bowl.
  5. Whisk in 2/3 cup sugar.
  6. Add flour; whisk until batter is smooth.
  7. Mix in pears with a wooden spoon.
  8. Transfer batter to pan.
  9. Sprinkle top with 1 tablespoon sugar.
  10. Bake until brown on top and tester inserted into center comes out clean, about 40 minutes.
  11. Cool in pan on rack.
  12. **Toloosen the cake, use a sharp knife and cut around the edge of the cake.
  13. Turn the cake onto a platter.
  14. Sift powdered sugar over top for presentation.
