Baked Zucchini Pie
- 4 c. zucchini
- 1 c. onion
- 1/4 c. margarine
- 2 eggs, beaten
- 2 c. mozzarella cheese
- 1 tube crescent roll dough
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1/2 tsp. black pepper
- 1 tsp. basil
- 1/4 tsp. oregano
- Preheat oven to 350u0b0.
- Peel and thinly slice zucchini and chop onion.
- Saute zucchini and onion in margarine for about 10 minutes, or until tender; remove from heat.
- Stir in spices. Separate rolls and press into pie plate.
- In large bowl; blend eggs and cheese together.
- Stir cooked zucchini mixture into eggs and cheese.
- Pour into pie pan, and bake 30-40 minutes, or until lightly browned and set.
- Let sit for 5-10 minutes.
- Slice into wedges and serve.
