Potage Megali(French Mediterranean Leek Soup)
- 4 c. sliced leeks
- 1 c. sliced onions
- 4 to 6 cloves garlic or according to taste
- 4 c. peeled, chopped tomatoes, drain liquid and keep separately
- 1 qt. chicken broth
- 6 to 8 leaves fresh basil
- 3 Tbsp. chopped parsley
- 2 Tbsp. tomato paste
- 4 Tbsp. olive oil
- 4 Tbsp. butter or margarine
- 1 1/2 c. cooked orzo (this is pasta, it looks like rice)
- 2 Tbsp. sugar
- Saute the leeks and the onions in oil and butter (or margarine) until soft.
- Add the tomatoes.
- Cook for 5 minutes.
- Add the tomato paste and the previously drained juice together with the chicken broth.
- Add the orzo.
- This dish tends to taste even better the next day.
