Mom-Mom'S Pumpkin Pie Squares
- 1 c. flour
- 1/2 c. rolled oats
- 1/2 c. packed brown sugar
- 1/2 c. margarine
- 13 oz. can evaporated milk
- 2 eggs
- 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1/2 tsp. vanilla
- 3/4 tsp. cloves, optional
- 2 c. pumpkin
- 1/2 c. packed brown sugar
- 2 Tbsp. margarine
- 1/2 c. chopped nuts
- Preheat oven 350 degrees.
- Mix together flour, oats, 1/2 c. brown sugar and 1/2 c. margarine.
- Then press into a greased 13 inch x 9 inch baking dish.
- Bake for 15 minutes.
- Mix evaporated milk, eggs, sugar, salt, ginger, vanilla, cloves, and pumpkin. Pour over hot base, return to oven for 20 minutes.
- Mix 1/2 c. brown sugar, 2 Tbsp. margarine and nuts until crumbly.
- Sprinkle on top of pumpkin.
- Return to oven for 30 to 40 minutes until knife comes out clean.
- Let cool and cut into squares.
- Top with whipped cream or Cool Whip.
