Gumdrop Cake
- 1 c. butter
- 2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 4 c. flour
- 2 tsp. baking powder
- 1/2 tsp. nutmeg
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 lb. gumdrops, cut up
- 1 lb. white raisins
- 1 c. chopped nuts
- 1 1/2 c. applesauce
- Cream first 4 ingredients and set aside.
- Sift together dry ingredients.
- Stir gumdrops, raisins and nuts into flour mixture. Add flour mixture to creamed mixture, alternating with applesauce. Beat well after each addition.
- Pour batter into a 13 x 9 x 2-inch pan lined with triple layers of waxed paper.
- Bake in 350u0b0 oven for 1 hour, or until it tests done.
- Let set in pan for 30 minutes. Cool thoroughly and store in foil.
- Makes one 5-pound cake.
