Chicken Cashew Lettuce Wraps
- Chicken Filling
- 12 ounces boneless skinless chicken breasts
- 1 1/2 tablespoons canola oil
- 1 cup onion, diced
- 2 garlic cloves, minced
- 1 teaspoon soy sauce
- 1/4 cup cashews, chopped
- Stir Fry Sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground ginger
- 1 teaspoon sesame oil
- For serving
- 8 leaves iceberg lettuce
- Mix all stir fry sauce ingredients. Set aside.
- Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes).
- Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown.
- When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken.
- Add stir fry sauce and saute for a few more minutes.
- Remove from heat and spoon into lettuce leaves to serve.
