Tofu And Leek Burgers

  1. Heat olive oil in a medium skillet over medium- high heat.
  2. Add the leeks, carrot, and ginger. Saute until vegetables are tender.
  3. Add the garlic and saute another minute.
  4. Remove from heat.
  5. Crumble the tofu in a food processor bowl. Add the vegetable mixture, soy sauce, salt, pepper, and cashews.
  6. Pulse until almost smooth.
  7. Transfer the tofu/vegetable mixture to a mixing bowl. Add the breadcrumbs and wheat gluten. Mix with a wooden spoon.
  8. Need the dough for 3 - 5 minutes until elastic strings start to form.
  9. Portion into 6 patties.
  10. Re-heat the medium skillet over medium heat. Add a small amount of olive oil to fry.
  11. Cook about 5 minutes on each side. They are done when the center feels a little firm.
