Mexican Corn Bread
- 2 c. corn meal
- 1 c. flour
- 4 tsp. baking powder
- 4 tsp. salt
- 3 eggs
- 1 1/4 c. milk
- 1 c. grated sharp cheese
- 2/3 lb. browned ground meat (season to taste)
- 2/3 lb. browned Owens Country sausage (regular)
- 1 onion, cooked with meat
- 1/4 c. bacon drippings
- 1 can cream-style corn
- 1 small can whole kernel corn
- jalapeno peppers, chopped (don't add too many, it could really get hot!)
- Mix first 6 ingredients.
- Put bacon drippings in the bottom of a 9 x 13-inch pan; dust with corn meal and brown in oven.
- Mix all other ingredients with corn bread mixture; pour over bacon drippings and corn meal.
- Cook about 1 hour or until done.
