Macadamia Nut Cream Pie
- 1 1/3 c. milk
- 3/4 c. sugar
- 1/2 c. Macadamia nuts, chopped
- dash of salt
- 1 tsp. vanilla
- 1 egg
- 5 tsp. cornstarch
- 2 egg whites
- 1 baked 9-inch pie shell
- 1 c. heavy cream, whipped
- In a saucepan, combine 1 cup milk, 1/4 cup sugar and 1/4 cup of nuts, salt and vanilla; scald.
- Blend the remaining 1/3 cup of milk with egg and cornstarch.
- Thoroughly stir some of the hot mixture into egg mixture; return all to saucepan.
- Cook 5 minutes more, stirring constantly, until mixture thickens.
- Cool 1 hour.
- Beat 2 egg whites until soft peaks form.
- Gradually add the remaining 1/2 cup sugar, beating until stiff.
- Fold carefully into cooled mixture.
- Pour into baked pie shell.
- Chill.
- Top with sweetened whipped cream and remaining 1/4 cup nuts.
