Macadamia Nut Cream Pie

  1. In a saucepan, combine 1 cup milk, 1/4 cup sugar and 1/4 cup of nuts, salt and vanilla; scald.
  2. Blend the remaining 1/3 cup of milk with egg and cornstarch.
  3. Thoroughly stir some of the hot mixture into egg mixture; return all to saucepan.
  4. Cook 5 minutes more, stirring constantly, until mixture thickens.
  5. Cool 1 hour.
  6. Beat 2 egg whites until soft peaks form.
  7. Gradually add the remaining 1/2 cup sugar, beating until stiff.
  8. Fold carefully into cooled mixture.
  9. Pour into baked pie shell.
  10. Chill.
  11. Top with sweetened whipped cream and remaining 1/4 cup nuts.
