Swiss Potato Salad

  1. boil potatoes with salt until tender reserving 1/4 cup of water.
  2. fry bacon until crispy then set aside reserving fat in pan.
  3. add onion until tender and then add vinegar and potato water and allow to reduce a bit.
  4. once reduced to desired consistency add to potatoes along with remaining ingredients folding in bits at a time.
  5. served warm or cold.

potatoes, salt, bacon, red onion, finger sized pickles, eggs, carrot, sugar, white vinegar, wholegrain, ground black pepper, parsley, rosemary, thyme, additional salt
