Broccoli-Chicken Casserole
- 1 lb. or 1 (10 oz.) pkg. frozen cut broccoli
- 2 c. frozen small whole onions or 3 medium quartered onions
- 1/4 c. margarine
- 1/4 tsp. salt
- 1 c. milk
- 1 (3 oz.) pkg. cream cheese
- 1/2 c. shredded cheese (American or Cheddar)
- 1 c. bread crumbs
- chicken breasts, cooked and cubed
- Cook frozen broccoli until tender.
- Cook onion until tender and drain.
- Melt 1/2 cup margarine and blend in flour, salt and pepper.
- Add milk; cool until thick.
- Blend in cream cheese. Place vegetables in 1 1/2-quart casserole with cubed chicken.
- Add sauce and lightly toss.
- Top with cheese.
- Melt remaining butter and toss with bread crumbs.
- Sprinkle on top.
- Bake at 350u0b0 for 40 to 50 minutes.
