Taco Meatloaf
- 1 1/2 cups crushed saltines (I have also used panko bread crumbs with great results)
- 1 (1 1/4 ounce) envelope taco seasoning
- 1/2 cup ketchup (I use 4 oz can tomato sauce with roasted garlic)
- 1 (4 ounce) can mushroom stems and pieces, drained (I use 1 cup fresh)
- 1 (2 1/4 ounce) can sliced ripe olives, drained
- 1 small onion, chopped
- 2 eggs, lightly beaten
- 2 tablespoons Worcestershire sauce
- 1 lb lean ground beef
- 1 lb ground turkey
- salsa, sour cream, shredded cheddar cheese and additional olives (optional)
- In a large bowl, combine the first eight ingredients. Crumble meat over mixture and mix well. Form a loaf and bake in a 11 x 7 pan.
- Bake, uncovered, at 350 degrees for 1 1/2 hours or until a meat thermometer reads 160 degrees. Serve with salsa, sour cream, cheese and olives.
