Aunt Beulah'S Liver Nips
- 1/4 lb. uncooked beef liver
- 1 medium onion
- 1/8 lb. uncooked beef suet (optional)
- 1 Tbsp. baking powder
- 2 tsp. salt or to taste
- black pepper to taste
- 3 c. sifted plain flour
- 1 c. beef stock or broth from cooked beef roast
- 1 1/4 c. uncooked pasta spirals
- 1 c. broccoli flowerets
- 1 c. carrots, thinly sliced
- 1/2 c. asparagus, cut into 1-inch pieces (optional)
- 1/2 c. sliced zucchini or yellow squash
- 1/4 c. margarine
- 5 oz. can evaporated milk
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. thyme
- 1/4 tsp. tarragon
- In an 8-cup measuring bowl, microwave 2 1/2 cups water on High for 8 minutes or until boiling.
- Add pasta and cook on High 5 to 6 minutes or until tender.
- Drain and set aside.
