Chicken Parmesan
- 4 boneless chicken breasts
- 3/4 c. fine dry bread crumbs (Italian seasoned)
- 1/4 tsp. salt
- 1/8 tsp. fresh ground pepper
- 1 egg, beaten
- 1/4 c. olive oil
- meatless spaghetti sauce
- 2 tsp. freshly grated Parmesan cheese
- 1 c. shredded Mozzarella cheese
- Pound chicken breasts to 1/4-inch thickness. Combine bread crumbs, salt and pepper. Dip chicken in egg. Coat with bread crumbs. Place chicken on a baking sheet. Cool and chill for 10 minutes. Saute chicken in olive oil over medium-low heat 5 minutes on each side or until golden brown. Remove chicken from skillet. Place in a 12 x 8 x 2-inch baking dish. Spoon spaghetti sauce on chicken. Sprinkle with Parmesan cheese. Bake at 350u0b0 for 15 minutes. Top with Parmesan cheese and bake an additional minutes or until cheese melts and sauce is bubbly.
